Web designing:

The design for a website. It includes the page flows etc. A website such as a wholly text one might not have any graphics in it at all. However, nowadays, in order to attract viewership and the ever increasing bandwidth capacity, more sites are rendering attention grabbing and interactive graphics.

Graphic Design:

Anything that one needs to design a graphic to be displayed. It is not specific to any medium. In the worldwide web, it usually means graphics on webpages. A graphic designing process encompasses employing various technique to compose an image from various other imagees, colours, level of opacity etc to bring about the desired result.

Animation:

Generally, animated graphics. Moving pictures such as cartoons in under this category.

Multimedia:

Basically means "multiple media". One would easily think of it as invoking the sense of sound and sight in its simplest form. Multimedia in internet usually in the simplest sense means that the web content is able to invoke these senses.

Google is one of the best places to find concise definitions to these terms. At Google"s search text box, just simple type define:<the term you are looking for> and your answer will appear right in front of your eyes.

This depends on the tertiary education institutions you are applying to and how flexible their course choices are. Graphic design stream usually focus more on the traditional design principles, usually for the print industry but nowadays also includes principles behind electronic media. Web design focus on the specific design principles of presenting effective information and presentation of information on electronic media.

Animation is a more specific stream towards producing moving pictures, usually you start off by studying traditional animation principles before you go on learning the various techniques to make 3D animations and special effects.

Multimedia is a very ambiguous term and different education institutions have different approach to the coursework. Usually, multimedia dabbles with all the different streams described above (graphic, web design, animation, sometimes even computer programming, e-commerce principles, etc.)
